Rustic Cottage Cheeses & Mushroom Tart

Serves 6 People

Cheese mixture

500g cottage cheese

150g cheese & Chives cream cheese

3 tbs pecorino cheese

1 tsp minced garlic

1 tsp chopped fresh chives

3 eggs

 

Mushroom Mixture

1 tbs butter

500g sliced mushrooms

1 glove garlic

2 sprigs fresh thyme

season with salt and pepper

2 sheets filo pastry 

1 beaten egg for egg wash

1.  Preheat oven to 200°C. Line large baking trays with baking paper.

1. In a frying pan on med - high heat add butter garlic, thyme and mushrooms and fry until all the moisture has been cooked from the mushrooms. Season to taste. Remove from heat, set aside to cool.

2. Whilst mushrooms are cooling. make cheese mixture.

3. In a bowl add all cheeses, garlic, chives and eggs. Combine all ingredients.

4. Place two pieces of filo pastry length ways on tray joining the sheets together by over lapping  sheets by 2 cms. Spread  cheese filling all over pastry leaving a border of 3cm all round the edges. Fold up the sides and both ends to hold in the cheese mixture. Egg wash all the edges of the tart.

5. Scatter Mushrooms  along the top of cheese mixture. Place in oven and bake for 15+ minutes or until the pastry is golden brown.

6. Remove from oven and cool slightly before serving.

 

 

I live in Adelaide (Australia) with my husband, my two adorable Norwegian cats ( Zeus and Zena ), a chicken, and a pigeon who now also thinks that he is a chicken! My ancestry is French so it goes without saying that my favourite place is Paris. The food, culture and atmosphere of Paris is nothing short of amazing.

I am a self taught home cook who loves big flavours in food. My passion for food surfaced when I was 10 years old, watching TV chef Ian Hewitson and learning different techniques. Since then, the food of Adrian Richardson and Jamie Oliver has been my inspiration. I love how one can create a healthy full flavoured meal from just the simplest of ingredients. I especially love chilli and garlic and use them in most of my food.

I enjoy hosting dinner parties for friends and family. Curries and rustic style dishes are my firm favorites and I know that my family and friends all agree! Just place it all in the middle of the table and let everyone help themselves enjoying great food with good company.

Whilst I enjoy cooking I still love to go out to restaurants, especially when you discover ones with amazing food and that you must try and replicate at home!
