Tapas Potata chirizo Spicy Salsa

SERVES 4 PEOPLE  ( SIDE DISH )

Potatas

700g potatoes pealed and cubes

1 tbs olive oil

1 sprig rosemary chopped

2 cloves garlic

1 red chill cut into 3 pieces 

Salt & pepper to taste

Chirizo  Sauce

1 tbs olive oil

1 large chirizo sausage slices 1/2 cm thick

1 medium red onion sliced thinly

2 cloves garlic finely chopped

1 red chilli finely sliced

1/2 tbs sweet pimenton (smoked paprika)

1 tsp dried oregano

400g tin diced tomatoes

3/4 cup water

1 tbs brown sugar

Salt & pepper to taste

1. Preheat oven to 200c.

2. In a large pot on high heat add cubed potatoes and cover with cold water. Add a pinch of salt to the potatoes. Bring to the boil, Reduce heat to medium and cook potatoes, uncovered, for 4 to 5 minutes or until just tender when pierced with a skewer. Drain. Transfer to a baking pan.  Add olive oil, fresh rosemary, garlic, chilli and season to taste. Combine all together and place in the oven cook for 20-30 minutes tossing occasionally, to crisp up all sides. 

3. Whilst the potatoes are cooking, start cooking the sauce.

4. In a large frying pan on medium heat add olive oil, onions, chilli and sliced chirizo, cook for 4-5 minutes. Add pimenton and dried oregano, cook for 1 minute. Add tomatoes, 3/4 cup water and brown sugar. Mix well. Season to taste and reduce heat to a simmer. Cook for 15-20 minutes or until the sauce has a nice thick consistency. 

5. Once potatoes and sauce are cooked, using a large serving bowl add all the potatoes and cover with the sauce.

Ready to serve.

 

 

 

 

 

I live in Adelaide (Australia) with my husband, my two adorable Norwegian cats ( Zeus and Zena ), a chicken, and a pigeon who now also thinks that he is a chicken! My ancestry is French so it goes without saying that my favourite place is Paris. The food, culture and atmosphere of Paris is nothing short of amazing.

I am a self taught home cook who loves big flavours in food. My passion for food surfaced when I was 10 years old, watching TV chef Ian Hewitson and learning different techniques. Since then, the food of Adrian Richardson and Jamie Oliver has been my inspiration. I love how one can create a healthy full flavoured meal from just the simplest of ingredients. I especially love chilli and garlic and use them in most of my food.

I enjoy hosting dinner parties for friends and family. Curries and rustic style dishes are my firm favorites and I know that my family and friends all agree! Just place it all in the middle of the table and let everyone help themselves enjoying great food with good company.

Whilst I enjoy cooking I still love to go out to restaurants, especially when you discover ones with amazing food and that you must try and replicate at home!
