Chicken Tikka Masala
4 tsp garam masala
1/2 tsp salt
1/2 tsp turmeric
1 tbs all purpose flour
1 tsp crushed garlic
1 tsp crushed ginger
500g chicken thigh fillet
Mix all the spices in a bowl, then add chicken mix well, making sure all the chicken is coated. Place in the refrigerator until required.
4 tsp olive oil
1 large brown onion finely chopped
4 tsp crushed garlic
4 tsp crushed ginger
400g tin diced tomatoes
1/3 cup cream (low fat )
1/2 cup chopped fresh coriander
1.Marinate the chicken, place in the refrigerator until required.
2. Heat 4 tsp olive oil in a large pan with lid over medium heat. Cook the onions until soft, 4-5 minutes. Add garlic and ginger cook for a further 3 minutes.
3. Add canned tomatoes and cook for a further 5 minutes on a low heat. Add marinated chicken and mix well. Place on lid, turn heat down to low - medium and simmer for 15 minutes. Be sure to keep checking the sauce that it does not get to dry. If so add 1/3 cup of cold water.
4. Add 1/3 cup of cream stir well and cook for a further 5 minutes on a low heat.
Add coriander season to taste.

I am a self taught home cook who loves big flavours in food. My passion for food surfaced when I was 10 years old, watching TV chef Ian Hewitson and learning different techniques. Since then, the food of Adrian Richardson and Jamie Oliver has been my inspiration. I love how one can create a healthy full flavoured meal from just the simplest of ingredients. I especially love chilli and garlic and use them in most of my food.
I enjoy hosting dinner parties for friends and family. Curries and rustic style dishes are my firm favorites and I know that my family and friends all agree! Just place it all in the middle of the table and let everyone help themselves enjoying great food with good company.
